After a week of traveling with the kiddos and eating food on the go, I’ve been craving home cooked food from the grill. The Hubs and I grill just about everything, including ribs, chicken, corn, and veggies. We’ve even grilled a whole breakfast before. One of my favorite veggies to throw on the grill is zucchini. Although it’s technically fall and zucchini is considered a summer squash , the temps in my town are still hovering around 80 degrees, so zucchini is still on the menu. I picked up three small zucchinis from my local international farmer’s market to grill up with some sweet onions. While the Hubs is grilling chicken, I prep the veggies. This is a really quick and easy recipe that makes a great companion to your main grilled dish.
What you will need:
- 3 small zucchini
- 1/4 of an onion (any will do)
- 1 Tbsp. olive oil
- Salt & pepper to taste
- Red chili flakes (optional)
Let’s get started
- Cut zucchini into slices
- Slice onion
- Coat veggies with olive oil
- Add salt, pepper, and red pepper flakes
- Place on grill pan
- Place the pan on the grill for about 10 minutes
Remove & Enjoy!
